I haven’t set aside much time to blog lately. I’m ok with it because I’ve been working and playing. I’ve even started cooking again…shocker!
I made a tasty Thai Curry a couple nights ago using lots of fresh veggies (the snap peas are from the farmer’s market) and lots of spicy red curry paste! I loosely based my recipe on this one I found online. We made ours vegetarian and halved the coconut milk (we used lite).
We topped our curry bowls with lime, cilantro, and sriracha (for an extra kick)!
We’ll definitely be saving this recipe!
