Chef Paul Prudhomme’s Blackened Tuna.

We learned several things on our recent trip to New Orleans. Blackened anything is awesome and …butter makes everything better. z promptly ordered a butt-load of blackening seasoning from our buddy K-Paul!

We decided to do blackened tuna in the cast iron skillet with a brown butter sauce (stick of butter, minced garlic, teaspoon of blackened seasoning, and some lemon juice). Make this sauce – your life will be changed!

We served the tuna with roasted squash from our farmer’s market!


This meal was awesome. I want to put that brown butter sauce on everything. EVERYTHING! It rocks.
