Before we get to anything relating to the title, I have to go back to Saturday morning when I woke up to the smell of something from my past: cinnamon rolls! We used to eat them all the time when we lived in DC, but haven’t had them since the move to VA! I was happy to have them back!
z made a nice breakfast and even got flowers for
me the table!
Ok, moving on to the title of the post! We made Vegetarian Thai Green Curry for dinner on Sunday night! This bottle of curry has been staring me in the face for a while, so I decided it had to be used!
Gather the ingredients: coconut milk, vegetable broth, curry spice, ginger, cauliflower, carrots, cilantro, spicy peppers, green beans, potato, onion, and lime!
We sautéed the onion, curry spices, and peppers in olive oil to start.
After the veggies were soft I added a half cup of coconut milk and two cups of veggie broth then added the potatoes.
On the other burner the green beans, carrots, and cauliflower were steaming.
The steamed veggies were added to the curry mixture as well as cilantro, basil and another half cup of coconut milk!
The veggies were served on top of jasmine rice with some limes and white wine!
It smelled amazing!
It tasted pretty good too ;)
After dinner…there was a weigh-in! A pup weigh-in!

That my friends, is a 28.5 pounder! He is growing about a pound a week…
I sure hope he stops soon!
On a less happy note: My grandma is in the hospital and it’s not looking good. We’re hoping she gets to go home to my parents house as soon as possible. Please send thoughts and prayers our way!
