En-chi-la-das.

A couple days ago, I started the soaking/cooking process for dried black beans. This morning, I sautéed 3/4 of a red onion, sliced carrots and garlic in olive oil until they were soft, then I added the black beans along with salt, pepper, cumin, and red pepper flakes. I cooked the mix until everything was heated, then I let it cool and put it in the fridge for later!

After I dropped Mo off at the bus station, I went to the gym and grocery store. I came home with all the fixin’s necessary to make enchiladas!

I spread the black bean mix on the tortilla and topped it with jalapenos!

After I rolled all the enchiladas, I laid them (seam side down) in a pan that had enchilada sauce on the bottom.

After 20 minutes in the oven, it was dinner time!

I started with half an enchilada on some greens…but later went back for the other half Winking smile

I saved some enchiladas for z when he comes home tomorrow! I hope he likes them!

After dinner I made some granola bars so I don’t have to spend so much money buying bars!

These are all the ingredients I used, but I didn’t take pictures of the process or the final product! Oops…

I ended up cutting them and individually wrapping them so they are easy to bring to work!

Time for homework and THE STEELERS! GO TEAM GO!

 

p.s. I think I just heard the mouse trap snap…ew. I wish my boyfriend was home. Gotta go…
